Method
- Peel and dice the potatoes into small, bite-sized cubes. Boil them in salted water for about 12-15 minutes until tender, then drain and set aside.
- Season the pork chops generously with salt and pepper. Heat a splash of olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 4-5 minutes per side until golden brown.
- Check for doneness: pork should reach 63°C/145°F in the thickest part. Remove the chops from the pan and let them rest on a plate for at least 3 minutes.
- In the same pan, add a knob of butter. Add the sliced onion and cook until soft, about 5 minutes. Add the sliced apples and chopped fresh sage leaves, cooking for another 4-5 minutes until the apples are tender.
- Add the drained potatoes to the pan with the apples and onions. Toss everything together for 2 minutes to warm through and combine flavors. Serve the pork chops topped with the apple and potato mixture.
Tip If you want extra depth, splash a tablespoon of vinegar or apple juice into the pan when cooking the apples to deglaze all those tasty brown bits from the pork.
